In the German Honey Ordinance and the EU Directive 2001/110/EC, honey is defined as "the naturally sweet substance produced by honey bees". In addition to this definition, the individual types of honey are also regulated, as well as specifications for the labelling and quality of honey.
The most important legally regulated quality parameters for honey are determined by the Tentamus Laboratory QSI in Bremen as part of the trade analysis. The analysis includes:
- Water content
- HMF content (marker for heating)
- Diastatic activity
- pH value
With the help of these parameters you can check the quality of your honey and can also see whether the honey meets the quality requirements of the German Beekeepers' Association (D.I.B.), for example.
