The mold toxin ochratoxin A (OTA for short) occurs particularly in cereals, coffee, nuts and spices and is formed during storage or transport. Ochratoxin A can accumulate in the kidneys after consumption and is therefore particularly toxic for this organ. In Regulation (EC) 1881/2006, the EU therefore sets maximum levels for ochratoxin A in certain foodstuffs.
